For my birthday, I traditionally make a carrot cake. This year I made this Incredibly Moist and Easy Carrot Cake from Adam and Joanne’s website Inspired Taste.
I love butter frosting, but this cake is made without it and is truly just as delicious. The added chopped pecans throughout the cake and on top was a nice addition. I left out the raisins. Plenty sweet enough!
