Homemade Granola Bars

A few teacher-friends and I recently went on a late summer boat ride at Point Bay Marina in Charlotte, Vermont. The bay was peaceful and gorgeous! There was a suggestion to bring snacks and I thought it might be fun to bring homemade granola bars because we could easily enjoy eating them on the boat without much fuss.

I discovered this Soft and Chewy Granola Bars recipe by West Coast food developers Joanne and Adam Gallagher on their website, Inspired Taste. Their website has helpful videos and very detailed directions that I appreciate.

I followed the exact recipe for the first batch and they came out great. For a second batch, I substituted maple syrup for the honey and, unfortunately, they crumbled while cutting the strips so I do not recommend replacing the honey with maple syrup.

Take them on a road trip, but watch out because they crumble easily and can get soft quickly if it’s too warm or kept out of the refrigerator too long.
